Celery is an Ancient Healing Food

After over a month (maybe 2) in my refrigerator, I realized that my celery was still alive and kicking with the parsley (which was very slowly on the decline, but still, losing its chlorophyll). Parsley and celery, are some of the most bacteria/fungus-resistant plants. The greens that were in the same bag as the celery (and parsley) decayed more slowly than those sitting by themselves. And while other plants, such as my scallions were starting to get slimy, their loss of vitality did not affect the celery.

I am a huge believer in “knowing” through observation. Without extensive research, I was able to understand the benefits of the celery root, for instance, by observing its interactions with its environment. The plant revealed its bacteria-resistance, it’s anti-infectious, anti-oxidant, anti-fungal nature…

Celery..particularly when juiced (for me :)) is a destroyer of any infectious entity in the body, and a creator of optimal health and wellness. Get your celery on, mayunn!
